2、易溶于水及乙醇水溶液,不溶于油脂、無水乙醇。有良好的抗氧化性。水溶液紅至紫紅色
Soluble in water and aqueous solution of ethanol, not soluble in fats, alcohol。There is a good antioxidant. Red to purple-red solution。
3、其色調(diào)及穩(wěn)定性受PH影響:酸性時呈穩(wěn)定的紅色或紫紅色;中性時呈藍色;堿性時呈不穩(wěn)定的綠色。
